PROBLEM TO BE SOLVED: To provide a heating cooking apparatus capable of accurately detecting the cooking temperature of a material to be heated and reliably heating the material at a cooking finish temperature, thus reducing the cost for heating. SOLUTION: The heating cooking apparatus comprises heating means 4 to heat the material 6, an infrared ray detecting means 9 to detect the quantity of the infrared ray radiated from the material 6 to perform a conversion of the heating cooking temperature and an output voltage, and a control means 13 to control the heating cooking of the material 6 based on the conversion result of the infrared ray detecting means 9, wherein the control means 13 adjusts the amplification of an output voltage of an amplifier 10 based on the level of the output voltage, and controls the heating cooking of the material 6 based on the adjusted output voltage.
