A method for the production of alkali salts of alpha-keto-carboxylic acids (I) involves treatment of an aqueous suspension of the corresponding calcium salt with a salt of the required alkali metal and an anion which forms a sparingly water-soluble calcium salt, then removing the calcium salt by filtration and isolating the alkali salt of (I) from solution.
