PURPOSE: Provided are gelatinized dry noodle containing green tea powder and preparing method thereof. Therefore, the prepared noodle can be stored for a long time without its decoloration and has a color, taste and flavor peculiar to green tea. CONSTITUTION: The gelatinized dry noodle contains 0.5-3.0 wt.% of green tea powder and its preparation method is characterized by the steps of: kneading wheat flour; gelatinizing it at 70-90 deg.C for 1-20 minutes; mixing the kneading with 0.5-3.0 wt.% of green tea powder referred to dry weight then kneading the mixture; and forming noodle strips. |
