PROBLEM TO BE SOLVED: To provide a freshness-retaining agent excellent in persistence of freshness retention and to provide a method for producing the agent. SOLUTION: This freshness-retaining agent containing antioxidant matter is obtained by giving useful microorganism group feed such as urine of livestock followed by proliferating the product. The useful microorganism group is composed of more than 80 kinds of microorganisms mainly lactic bacterium, yeast fungus, filamentous fungus, Ray fungus and photosynthetic bacteria. The antioxidant matter as a kind of enzyme is secreted when the useful microorganism group is proliferated, and suppresses the proliferation of bad bacteria by contacting to the bad bacteria such as putrefactive bacteria. It is assumed that freshness-retaining function is demonstrated by electrically neutralizing putrefactive substance. The freshness-retaining agent is made preferably colorless and transparent by being subjected to filter treatment after the proliferation of the useful microorganism group. When the useful microorganism group is included in the filter treatment liquid subjected to the filter treatment, feed is put into the filter treatment liquid and preferably the useful microorganism group is further proliferated.
