SOLUTION: Since the contents of shelled eggs are usually aseptic, the shelled eggs are as such quickly frozen with a freezing means 30 in a cooling medium in a temperature range not deteriorating the functions of protein ingredients. Then, only the surfaces on the insides of the shells of the shelled eggs are thawed, and the shelled eggs are then subjected to egg-breaking treatment and shell-removing treatment with an egg-breaking means 40 in an aseptic state to obtain the frozen preservative raw eggs maintaining the shapes of the eggs.
