<P>PROBLEM TO BE SOLVED: To provide a method for frying by which the quality of the fried product is kept suitable. <P>SOLUTION: This method of frying comprises frying an ingredient by using an oil and fat filling a fry cooker. The ingredient is fried while keeping the total concentration of tocopherol and tocotrienol contained in the oil and fat filling the fry cooker at ≥0.66 time as high as the total concentration of the tocopherol and the tocotrienol contained in the unheated oil and fat.
