<P>PROBLEM TO BE SOLVED: To provide newly constituted potage where a free γ-aminobutyric acid component and/or a β-carotene component are/is enriched, and to provide a method for surely and efficiently producing the newly constituted potage. <P>SOLUTION: The potage is obtained by the following steps: mixing 1 wt.% of carrot, nearly 0.5 wt.% of onion, and nearly 0.5 wt.% of hulled rice with embryo obtained by normally cooking hulled rice with embryo soaked in lukewarm water for 3-4 days together with each other to prepare a mixture to be used as a potage base, boiling the mixture together with almost the same weight of water as that of the potage base after adding an appropriate amount of soup stock, suitably seasoning the boiled mixture with salt and pepper followed by making it pasty using a blender or the like, and heating and boiling the paste together with milk having almost the same weight as that of the water. <P>COPYRIGHT: (C)2003,JPO |
