FIELD: food-processing industry. SUBSTANCE: method involves using water flow for fish carcass scaling by forming free water flow of rectangular section at outlet end of inlet device; feeding water flow having temperature below 35 C to fish carcass surface from tail end to head end into space between fish carcass surface and fish scale; moving water flow along fish carcass at rate of from 0.02 m/s to 0.20 m/s; feeding water flow at outlet end of inlet device at average rate of 5-45 m/s, with length of water flow part restricted between outlet part of inlet device and fish carcass surface being maintained within the range of 0.1-0.4 m; providing final cleaning of fish carcass from scale by means of cutting tool. EFFECT: increased efficiency of scaling process, eliminating damage to fish carcass, and improved quality of final product. 2 cl |
