PURPOSE: A method of processing the cuttlefish improved in preservation effect, deodorizing effect and nutrient supply effect by coating a high molecular chitosan solution on the surface thereof is provided. Therefore, the processed cuttlefish is prevented from being rolled or constricted while heating and being preserved for long-term period without deformation to a shape thereof. CONSTITUTION: A cuttlefish is coated with a 5 to 20% chitosan solution, fixed to a constriction-preventing frame for heating the cuttlefish, heated with steam and then dried with natural wind or a blower to give a processed cuttlefish having a moisture content of 60 to 70%. The chitosan solution is diluted in a solvent selected from the group consisting of water, alcohol and natural fruit juice. The constriction-preventing frame comprises a flat working plate(1) and a fixing pin(2) for fixing cuttlefish(10) to the working plate. |
