<P>PROBLEM TO BE SOLVED: To increase productivity in a monascus pigment, particularly increase the productivity of an orange dye of monascoruburin in the method for produc ing the monascus pigment with the use of a Monascus microorganism. <P>SOLUTION: A microorganism belonging to Monascaceae and capable of producing a monascus pigment is cultured in a liquid medium under acidic conditions while feeding acetic acid to collect a monascus pigment, particularly an orange pigment of monascorburin from the culture. <P>COPYRIGHT: (C)2003,JPO |
