摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing a Chinese soup, preventing loss of an ingredient for deliciousness which is an origin of the deliciousness of the Chinese soup, such as a Chinese noodle soup, and inherent in pig bones, chicken bones, etc., as much as possible, to provide the Chinese soup, to provide a concentrated soup for dried noodles, frozen noodles, etc., by using the Chinese soup, and to provide a powdered soup for the same, by using the Chinese soup. <P>SOLUTION: This method for producing the Chinese soup comprises using at least the pig bones and/or the chicken bones as bases, wherein the pig bones and/or the chicken bones are roasted in an oven at 250-350&deg;C until surfaces of the bones are burnet light brown, and then the roasted pig bones and/or chicken bones are boiled with water so as to extract the ingredient for the deliciousness therefrom. The Chinese soap, the concentrated soup, and the powdered soup are each produced by the method.
