PROBLEM TO BE SOLVED: To obtain a food material excellent in preservability and easy in mixing with other foods by using devil's tongue as a raw material. SOLUTION: A method for producing the all-round food material by using devil's tongue as a raw material comprising the following processes. (a) A process in which devil's tongue powder is swollen and dissolved by adding water to obtain an devil's tongue paste. (b) A process in which an alkaline treatment is applied by adding a basic salt to the devil's tongue paste, or by adding the basic salt in the previous process. (c) A process in which a solidification reaction of devil's tongue is suppressed and the preservability is improved by decreasing the basicity of the devil's tongue paste to a specified pH value. (d) A process in which an enzymatic treatment is applied for removing elasticity by cutting devil's tongue fibers. The all-round food material prepared by using devil's tongue as a raw material by the method. |
