Independent claims are also included for: (1) an in-mold frozen topping for sweet or savory pastry products, comprising a mold (1) and a frozen topping comprising an upper layer of food (12) and a lower support layer (10) comprising a food base and a thickener or gelling agent; (2) production of a sweet or savory pastry product from the in-mold frozen topping by removing the frozen topping from the mold, placing the frozen topping on a pastry base and thawing the topping. |
