PROBLEM TO BE SOLVED: To provide a method for producing a capsinoid, capable of simply producing the capsinoid in a short time with a high yield, without using a scavenger of water or an alcohol which is formed according to condensation, when the capsinoid is produced by esterification for which an enzyme is used, and to provide a method for stably preserving the produced capcinoid, by conducting purification of the obtained capsinoid under a stable condition. SOLUTION: This method for producing an ester compound comprises condensing a vinyl ester expressed by general formula (1) (R1 is a 5-25C alkyl or a 5-25C alkenyl of which the each may be substituted) with a hydroxymethylphnenol expressed by general formula (2) (R2 to R6 are each hydrogen, hydroxy, a 1-25C alkyl, a 2-25C alkenyl, a 2-25C alkynyl, a 1-25C alkoxy, a 2-25C alkenyloxy or a 2-25C alkynyloxy, provided that at least one of R2 to R6 is hydroxy) in the presence of an enzyme, so as to produce the ester compound expressed by general formula (3). Further, a method for stabilizing the ester compound comprises adding a fatty acid expressed by general formula (4) (R1' is a 5-25C alkyl or a 5-25C alkenyl of which the each may be substituted) to the ester compound expressed by general formula (3).
