<P>PROBLEM TO BE SOLVED: To provide a method for easily producing an active component such as a fat-soluble component of a vegetable as a CD clathrate compound without using a complicate procedure. <P>SOLUTION: This method for the production of the cyclodextrin clathrate compound of the fat-soluble component comprises the mixing of a vegetable containing a fat-soluble component with starch (which can be omitted or whose quantity can be decreased when the vegetable itself contains starch) and a fat-dissolving solvent and treating the mixture with a cyclodextrin synthetase. <P>COPYRIGHT: (C)2003,JPO |
