摘要 <p><P>PROBLEM TO BE SOLVED: To reduce the by-products from the distillation step in the production of Shochu (white distilled liquor). <P>SOLUTION: In the production of Shochu, the by-products from the distillation step (a kind of pot ale) are used as a primary fermentation mixture or drawing water. The production process comprises (A) a step where the starting starch is fermented, (B) a step where the resultant fermentation mixture is distilled under normal or reduced pressure as it is kept clear to obtain the product as pure distillate and the distillation by-products as remaining liquid residue like pot ale, and (C) a step where the by-products are added to the starting raw starch and the mixture is subjected to fermentation. Even when the by- products are employed, Shochu can be produced as the levels of the fermentation yield and the quality of the product are retained with the amount of the byproducts from the distillation step reduced. <P>COPYRIGHT: (C)2003,JPO</p>
