A method for producing a protein food concentrate from dehulled sunflower kernel provides for drying the kernel, making oilseed flakes from the kernel, separating oil from the flakes, extracting the oil from the flakes with a solvent, running down the solvent from extraction cake flakes. The kernel is dried in a bubbling bed up to a moisture content of 2.0-2.5% at a temperature of drying air of 60-80 °С, crushed up to forming flakes of 0.2-0.5 mm in thickness, the oil is separated through molder slots, the oil is separated from the flakes by means of extracting with the organic solvent hexan or nefras, and the solvent from the cake is run down under vacuum. The extraction cake flake is dried up to the moisture content of 2.5-3.5% and shredded up to the size of particles of 0.16-0.25 mm. The obtained protein food concentrate has a protein content of 52.0-57.0% and is a white powder without flavour and aroma, without extraneous impurities, comprises dietary fiber in an amount 4.0-4.4% and can be used for making food products. |
