PROCESS FOR EXTRACTING POLAR PHYTOCHEMICALS

A process comprises the steps of : providing a natural (e.g. plant) material ; extracting a first sample of the material with a polar solvent to produce a polar extract and a non-polar residue; subjecting the polar extract to ion- exchange chromatography to produce an extract enriched in ionic-compounds an d a non-ionic residue; and chromatographically fractionating the enriched extract to yield one or more polar fractions comprising one or more ionic (phyto)chemical(s).
