FIELD: food industry. SUBSTANCE: invention relates to food-concentrate technology, in particular to drink concentrate production. Method is distinguished by that conditioned bananas are treated with preparation obtained from biomass of micromycete Pythium irregulare according to given technology and aged for 2 to 5 h. Bananas are then peeled, pulp is disintegrated to give juice, peel is hydrolyzed, and separated hydrolyzate is blended with juice.
