SUBSTANCE: citrus fruit, after extraction of bitter substances therefrom with liquefied nonpolar gas, are treated with preparation obtained from biomass of micromycete Mortierella polycephala according to given technology, aged, soaked with liquefied ammonia under superatmospheric pressure, after which pressure is lowered to atmospheric value at velocity allowing fruit to be frozen.
