<P>PROBLEM TO BE SOLVED: To provide dried egg for noodles facilitating disaggregation of the noodles when added thereto and making the surface of the noodles smooth, and to provide noodles using the dried egg. <P>SOLUTION: The dried egg for noodles is obtained by enzyme treatment of liquid egg with phospholipase A followed by evaporation to dryness. In the dried egg, the rate of enzymolysis is ≥10%. The noodles using the dried egg are such as to be incorporated with 0.1-5.0 wt.% of the dried egg based on the noodle stock powder. <P>COPYRIGHT: (C)2003,JPO |
