摘要 <p><P>PROBLEM TO BE SOLVED: To provide a method for producing alcoholic drinks obtained by reducing amino acids that cause deterioration of the alcoholic drinks. <P>SOLUTION: This method comprises a step subjecting the alcoholic drinks to an amino acid deaminase treatment, as an example of the concrete methods, comprises a step passing the alcoholic drinks through a carrier fixed with the amino acid deaminase. The amino acid deaminase include an amino acid oxidase, and the alcoholic drinks include Japanese Sake (rice wine). The method suppresses deterioration such as increases in an odd taste, coloring, and a deteriorated smell, or the like, while keeping a balance of flavor peculiar to the alcoholic drinks. The method is advantageous in economics and workability because the method enables repeated use or continuous use of the enzyme by utilizing the carrier fixed with the enzyme. <P>COPYRIGHT: (C)2003,JPO</p>
