1312352 Dehydrated potato product G WILKE 17 July 1970 [17 July 1969] 34884/70 Heading A2D Producing a potato product for use in making dumplings comprises forming a moist dough from uncooked or partially cooked potato and passing the dough through a rolling mill in which each subsequent roller runs faster than the preceding roller and transferring, by means of a scraper blade, the moist compacted film formed on the last roller onto the surface of a belt upon which the dough is dried until its surface is compacted and loamy, and has a flake-like or scale-like structure. The dried dough may be comminuted into small particles. The dried dough may be mixed into a dough with water, kneaded, granulated and dried, e.g. in a vacuum, to form expanded and porous granules. The dough may contain semolina. or other starch or albumen containing materials, or spices or mixtures thereof. |
