PROCESS FOR PRODUCING GLYCOSIDE USING DIGLYCOSIDASE

A process for producing a glycoside using a diglycosidase characterized in that the glycoside is synthesized by treating a substrate comprising a disaccharide glycoside serving as a glycosyl donor and a compound having hydroxy of a glycosyl receptor with the diglycosidase and thus taking advantage of the glycosyl transfer reaction by the enzyme. In the process for producing a glycoside using a diglycosidase as described above, the diglycosidase is beta-primeverosidase. Thus, it becomes possible to provide a process whereby not only an aroma precursor comprising beta-primeveroside but also various glycosides expected as being useful in various fields (foods, toiletry products, drugs, etc.) can be produced at a high yield.
