A method of providing a gel comprising gellan comprises the steps of fermenting a microorganism in a carbohydrate containing medium so as to yield a crude gellan gum fermentation broth and gelling the crude fermentation broth. The method may comprise the further step of deacetylating the gellan. The microorganism is preferably Sphingomonas paucimobilis strain ATCC 31461. The carbohydrate is preferably glucose. The gel may be used in pet foods. Also claimed is a method of forming a concentrated gellan gel by comminuting the gel and removing the water thus separated. |
