PURPOSE: A microorganism Bifidobacterium lactis producing β- glucosidase and a method for converting isoflavone into isoflavone aglucon using the same are provided, thereby effectively producing isoflavone aglucon. CONSTITUTION: A microorganism Bifidobacterium lactis IF65(KCCM-10347) producing β- glucosidase is provided. A method for converting isoflavone into isoflavone aglucon comprises fermenting isoflavone-containing plants using Bifidobacterium lactis IF65(KCCM-10347), wherein isoflavone-containing plant is selected from soybean, arrowroot, clover, alfalfa, black beans, Glycyrrizae Radix, Medicage sativa L. and pomegranate; the isoflavone-containing plants are pretreated using protease; and the protease is selected from promod, alcalase, neutrase and papain.
