PROBLEM TO BE SOLVED: To provide a method for producing a large amount ofγ-aminobutyric acid without using pyridoxal phosphate known as a medicine. SOLUTION: A glutamic acid solution containing glutamic acid or a glutamic acid salt is mixed and reacted with rice bran and a yeast to convert the glutamic acid in the glutamic acid solution and glutamic acid in the rice bran intoγ-aminobutyric acid.
