<P>PROBLEM TO BE SOLVED: To establish a technique for producing beer having a polyphenol content higher than that of ordinary beer by using malt of six-rowed barley as a raw material. <P>SOLUTION: The method for producing beer having enhanced polyphenol comprises a process for using malt of ground six-rowed barley as a raw material and mixing the malt with warm water to form Maische, a saccharification process for saccharifying the Maische, a filtration process for filtering the saccharified Maische to give wort and a fermentation process for adding hop to the wort, boiling the wort to give hot wort, cooling the hot wort, filtering the wort, inoculating the filtrate with yeast 1449 strain belonging to the Saccharomycess and carrying out fermentation. <P>COPYRIGHT: (C)2003,JPO |
