PROBLEM TO BE SOLVED: To provide a health water which is a super mineral water enabling efficient intake of various essential elements and provides an optimum elemental distribution after intake according to the physical condition of each individual, and its preparation process. SOLUTION: The health water is prepared by mixing an aqueous solution which essentially comprises metal salts and non-metal salts obtained by pulverizing vermiculite derived from weathered black mica or granite and dissolving this into an aqueous sulfuric acid solution, and an aqueous solution obtained by dissolving chitin and chitosan in vinegar or lactic acid. Here, chitin and chitosan are obtained by dissolving pulverized crab shells, etc., in an aqueous sulfuric acid solution and washing away the unwanted matters. The health water enables the body to abundantly ingest ultra-trace elements, which animals and plants often fall short of. After the minimum necessary amounts of trace elements according to the physical condition of each individual are ingested by the body, the remainder binds to chitin and chitosan and is excreted from the body as harmful substances. In addition to their roles as functional food, chitin and chitosan are important for exerting their functions in excreting the excessive micronutrient minerals from the body as harmful substances.
