The protection device comprises means (7) for isolating the blade (8) connected to a handle through a first elastic link (6) for moving the handle between passive and active positions under the effect of external pressure. The handle includes a proximal part (3) linked to the isolating means and to a distal part (4) which carries the blade through a second linking means (105) for pivoting the two parts between the passive and active positions. In the passive position the two parts are inclined at an angle (alpha) less than the angle at which they are inclined in the active position.
