A dough processing machine has a working surface where the dough is laid in two layers with a filling between them. The working surface is a conveyor to carry the dough through workstations in a working direction. The lower layer is laid at the first station, to be spread with the filling at the next station to be covered by the upper layer at a dough laying station. The dough processing machine for the production of small filled pastries, and especially rolled and twisted filled pastries, has a working surface (2) where the dough is laid in two layers (11,13) with a filling between them. The working surface is a conveyor (21-24) to carry the dough through workstations in a working direction (29). The lower layer is laid at the first station (3), to be spread with the filling at the next station (5) to be covered by the upper layer at a dough laying station (6). A cutting station (7) has a number of cutters, to separate the dough structure into longitudinal strips, and a further cutter (8) applies lateral cuts to separate the strips into portions.
