PURPOSE: A process for preparing hot pepper paste using onion and garlic is provided, thereby increasing the storage time of hot pepper paste, and easily using onion and garlic together with hot pepper paste in cooking the food. CONSTITUTION: A process for preparing hot pepper paste using onion and garlic comprises the steps of: cutting onion and garlic; adding 16 to 30 wt.% of prepared onion, or 16 to 30 wt.% of prepared garlic into hot pepper paste and mixing them; drying the mixture at 50 deg. C for 5 to 7 hours to the water content of 1 to 2%; and pulverizing the dried hot pepper paste and packing the powder thereof. |
