<P>PROBLEM TO BE SOLVED: To provide a method for processing seeds solving the problems that, in processing such seeds as soybeans or red beans in particular, the soaking time depends on ambient temperature, therefore it is difficult to accurately determine the soaking time, moreover, in boiling the seeds directly with steam, a temperature unevenness tends to occur, occasionally leading to partial scorching, thus being impossible to carry out uniform boiling. <P>SOLUTION: The method for processing seeds comprises the following practice: the seeds are soaked in water which is kept at a necessary temperature by passing it through a device for keeping the water at the temperature and circulated, thereby the soaking time for the seeds can be specified regardless of ambient temperature; furthermore, by bringing the circulating water into a 110-130°C pressurized water, the seeds can also be boiled.
