<p><P>PROBLEM TO BE SOLVED: To provide a method for Sake brewing that can give Sake of expected quality easily. <P>SOLUTION: In this method of producing Sake, the raw Sake formed from yeast mash, steamed rice, malted rice and mashing water is combined with electrolyzed water prepared by an electrolyzed water generator (A) as a diluting water (S20). In this case, the electrolytically treated water is preferably alkaline and its pH is preferably 9. The electrolyzed water may be acidic electrolyzed water and the pH is preferably 3-5. The electrolyzed water generator (A) is a diaphragm electrolytic cell that can produce both acidic water and alkaline water and any of them is added as adjusting or diluting water. <P>COPYRIGHT: (C)2003,JPO</p> |
