<P>PROBLEM TO BE SOLVED: To provide a tuna roe processed product having pollack ovum-like texture and good taste, having beautiful petal shape, star shape or Asteroidea shape by processing tuna roe which has been discarded hitherto. <P>SOLUTION: The processed food of tuna roe is obtained by cutting tuna roe in round slices and cutting the round slices in fan-like shape so as to have ≥60°C center angle to provide roe pieces and heating the roe pieces and thereby forming the roe pieces in petal shape by utilizing a reversal phenomenon in which exodermis of the roe is moved to the center by heat shrinkage of the exodermis and roe is branched and arranged in petal shape on the outside of the exodermis. The reversal operation is carried out in a warm water or by steam. The processed food can be applied for canned food, retort food or fried food. <P>COPYRIGHT: (C)2003,JPO |
