METHOD FOR LOWERING RESISTANCE OF BACTERIAL SPORE

PROBLEM TO BE SOLVED: To provide a method for promoting the germination of bacterial spore and lowering the resistance and provide a means for exterminating bacterial spores in a food under milder conditions. SOLUTION: The method for lowering the resistance of bacterial spores comprises the treatment of bacterial spores with high-pressure carbon dioxide. The food sterilizing method comprises the treatment of a food with high-pressure carbon dioxide and the sterilization of the treated food. COPYRIGHT: (C)2003,JPO
