摘要 PURPOSE: A method for manufacturing healthy naengmyon noodles using mandarin peel is provided, which healthy naengmyon noodles are useful for treatment of adult diseases such as sclerosis of the arteries and hypertension. CONSTITUTION: A method for manufacturing healthy naengmyon noodles using mandarin peel comprises the steps of: pulverizing 17.8 wt.% of dried orange peel, 7.5 wt.% of lampshade, 5.4 wt.% of hardy-orange peel, and 5.3 wt.% of orange peel and mixing them; adding 64.0 wt.% of wheat starch and 0.2 wt.% of salt into the mixture; adding 19 liter of purified water into 22 kg of the mixture; kneading the mixture for 20 minutes; and manufacturing naengmyon noodles from the dough using a naengmyon noodle manufacturing device at 900 to 950 deg. C.
