摘要 FIELD: food-processing industry. SUBSTANCE: method involves impregnating raw plant material with liquefied gas, such as ammonia, at pressure above atmospheric pressure, with following releasing of pressure to value equal to atmospheric pressure at rate providing freezing of raw plant material; before impregnation process, treating raw plant material with preparation produced by sequential extracting of Mortierella spinosa micromycet biomass with the use of non-polar extractant in above-critical state, water, alkaline, water, acid, water, alkaline, and water, with following joining of first extract with solid residue, said preparation being used in an amount of 0,5-1.104 mg/t; holding for 2-5 hours. EFFECT: improved organoleptical properties by eliminating opalescence of finished product.
