FIELD: food-processing industry. SUBSTANCE: method involves obtaining first inclusion clathrate of "guest"-"host" type by rubbing aromatizants of monosaccharides or derivatives thereof; obtaining second inclusion clathrate by the same rubbing process, wherein "guest" component is first inclusion clathrate and "host" component is mixture of natural linear and branched food saccharides or modified food polysaccharides. EFFECT: increased efficiency by changing taste and flavor of food products and provision for obtaining wider range of finished products with required processing properties. 3 ex
