PROBLEM TO BE SOLVED: To provide a pressure cooker capable of performing an efficient pressure cooking with safety and easiness in handling for business use. SOLUTION: This pressure cooker 30 comprises a frame body A having a base part 1 and a columnar part 2; a gas stove 4 installed to the base part 1; a control device 6 for controlling the gas combustion of the gas stove 4 with the temperature as parameter; a timer switch 7 interlocked with the control device 6; a rotating lever provided above the columnar part 2; a pan lid 11 mounted on the lower end of a rod 9 vertically moved by the rotating operation of the rotating lever and pressed onto a pressure pan 10 placed on the gas stove 4 in the bottom position to seal it; a temperature sensor 13 for detecting the internal temperature of the pressure pan mounted on the pan lid 11 and outputting a detection signal to the control device 6; and a lock mechanism K having a lock pin 15 for fixing the rotating lever 8 in the state where the pan lid 11 is pressed onto the pressure pan 10.
