PURPOSE:To prepare a DHA-containing multiphase emulsion type fat and oil composition having a water-in-oil type emulsion structure, excellent in emulsion stability, storage stability, flavor and taste, and useful for margarine, etc., by mixing and emulsifying a specific water-in-oil type emulsion liquid with an outer oil phase part prepared by dissolving an emulsifier in fats and oils. CONSTITUTION:This DHA-containing multiphase emulsion type fat and oil composition is prepared by mixing and emulsifying (A) a water-in-oil type emulsion liquid with (B) an outer oil phase part prepared by dissolving an emulsifier in an fatty oil such as rape oil. The oil-in-water type emulsion liquid A is obtained by emulsifying (i) an inner oil phase part prepared by adding 0.1-10wt.% of a glycerol fatty acid ester and/or a sucrose fatty acid ester as an emulsifier to an oil phase part containing DHA with (ii) a water phase part prepared by adding 0.1-15wt.% of the glycerol fatty acid ester and/or the sucrose fatty acid ester as an emulsifier and 0-8wt.% of a gummy substance to a water phase part. |
