METHOD OF TREATING GERMINATED WHEAT GRAIN

A method of processing germinated wheat grain involves heating the grain with infrared irradiation, binning thereof with air blowing and cooling. Grain heating is carried out stepwise in three stages at a temperature from 40 to 50 DEGREE C alternately with the binning thereof with air blowing for 1-2 min, and heating the grain with infrared radiation up to a temperature of 79-81 DEGREE C is carried out. By using the present method, the highest lowering of the amiolytic activity of the grain can be achieved while the degree of denaturation of gluten is the lowest.
