Aqueous polymer latex based on poly-unsaturated carbohydrate or anhydro-carbohydrate monomers. An aqueous polymer latex containing a dispersed polymer obtained by emulsion polymerization of radically-polymerizable poly-unsaturated carbohydrates or carbohydrate derivatives (A) of formula (I) or (II): (1) Z-(OCO-CR1=CH2)p (I); or (2) A-(O-X)p (II). Z = a carbohydrate residue in which the number of free hydroxyl groups is reduced by p; p = 2-6; R1 = H, 1-8C hydrocarbyl, -COOR2 or -CH2COOR2; R2 = H or 1-8C hydrocarbyl; A = an anhydro-carbohydrate residue; X = a radically-polymerisable unsaturated group. Independent claims are also included for: (1) Polymer latex containing dispersed composite polymer particles, especially core/shell particles obtained by 2-stage emulsion polymerisation using the above monomers and optionally other comonomers; and (2) A method for the production of aqueous polymer lattices by radically-initiated emulsion polymerisation of carbohydrate-based monomers (A) as above.
