<P>PROBLEM TO BE SOLVED: To provide a method for producing a green tea flavor, capable of giving the green tea flavor having a pleasant savor characteristic of the green tea, and to provide a green tea-based beverage having no offensive odor caused by sterilization treatment and so improved as not to have bitterness and impurities in taste, by using the green tea flavor. <P>SOLUTION: This method for producing the green tea flavor comprises extracting the flavor from green tea leaves with water having a temperature of <10°C.
