<P>PROBLEM TO BE SOLVED: To provide a seasoning composition for Chinese foods, Japanese foods and Western foods capable of carrying out simple and advanced seasoning, mainly in Chinese noodle restaurants for business use, Chinese restaurants, Japanese restaurants, Japanese style pubs, western style restaurants, excellent in cooking property, having good storage stability and rich in delicious taste of new shellfishes. <P>SOLUTION: The seasoning composition comprises boiling flakes of dried fishes (sardine, mackerel, tuna, sea bream, etc.), shellfishes (oyster or common scallop) and sun-dried adult shellfish (about 5-10 years old) of Mytilus edulis with a seasoning water prepared by mixing red wine with Japanese wine, water and 100% apple juice each in equal amount for about 30 min and then adding brown sugar, powdery root tangle and a solar salt produced in Okinawa thereto and carrying out heat treatment of the mixture with weak fire for 120 min. <P>COPYRIGHT: (C)2003,JPO |
