<P>PROBLEM TO BE SOLVED: To provide a maturation-accelerating device capable of surely accelerating the maturation of a liquid such as a sake, etc., in an industrial scale by the irradiation of a weak ultrasonic wave. <P>SOLUTION: This maturation-accelerating device 10 is equipped with an industrial maturing tank 12 for housing liquid such as the sake, etc., to be matured, an ultrasonic wave-oscillating element 20 capable of continuously applying the weak ultrasonic wave to the liquid 14 in the maturing tank 12 and a oscillator for exciting the element.
