<p>PROBLEM TO BE SOLVED: To provide a seaweed paste for pickling made of a fermented product of the seaweed, scarcely causing looseness of the paste and capable of being easily handled, and to provide a method for producing pickles by using the same. SOLUTION: This seaweed paste for pickling made of the fermented product of the seaweed is obtained by decomposing the seaweed with saccharolytic enzyme including cellulose so as to convert the seaweed into unicellular particles, and fermenting the particles with a microbial consortium comprising lactic acid bacteria and yeast. A combination of one or more kinds of lactic acid bacteria selected from genus Lactobacillus and one or more kinds of yeast selected from genus Debaryomyces, genus Candida, and genus Saccharomyces is preferably used as the microorganism consortium. The method for producing the pickles comprises using the seaweed past, so that the pickles having aromaticity and excellent in water-holding capacity are produced more easily in handling, when compared with conventional rice-bran pastes for pickling which have problems of odors and require labors for handling them.</p> |
