<p>The invention relates to the use of a fatty acid modified carbohydrate obtainable by reaction of: (i) at least one carbohydrate or an acyl ester thereof; and (ii) a fatty acid, an alkyl ester thereof or a derivative thereof as reactive diluent in a coating.
