<p>A piece of meat (M) is introduced into a pressing chamber defined by a cylindrical container (2) and two coaxial opposite mobile walls (3) inside the container (2). A rotary blade (5), with a spiral cutting edge, cuts the piece of meat into slices according to a cutting plane which is perpendicular to an axis (x-x) of the container (2) and which crosses the pressing chamber. The two mobile walls (3) are controlled by two axial hydraulic actuators (4) and commanded to move axially coordinatedly in steps in order to keep an axial distance therebetween constant and also a crushing action on the piece of meat constant during a slicing stage. The invention enables slices of a same weight to be cut very precisely and with high productivity.</p> |
