PROBLEM TO BE SOLVED: To provide a method for stably manufacturing naringenin chalcone and/or a derivative thereof stably. SOLUTION: A cyclodextrin, in particular,γ-cyclodextrin is added and mixed in an aqueous solution containing naringenin chalcone and/or a derivative thereof. Thus, the naringenin chalcone can be manufactured stably. Also, after adding the cyclodextrin, by stirring the aqueous solution containing the naringenin chalcone to increase the opportunity of physical contact of the naringenin chalcone with the cyclodextrin, effect on stabilizing the naringenin chalcone is raised.
